NO FAIL PIZZA DOUGH

Every Friday our family has pizza and movie night. We hardly ever get takeout pizza as my kids prefer the pizza I make from home!
This has got to be the easiest, no fail recipe ever. This recipe makes 2 medium size pizzas, and it’s easily doubled if you have a large crowd. ….and if that’s not enough, I have the sauce too!  This sauce is simple and yummy. It also makes a lot so you can put any extra in a freezer baggie and freeze it up to three months. Simply take it out the morning and let it defrost for dinner that evening.


INGREDIENTS

  • DOUGH:
  • 1 tablespoon active dry yeast
  • 1 cup warm water
  • 2 tablespoon olive oil
  • 1 tablespoon honey
  • ¼ teaspoon salt
  • 3 to 4 cups all-purpose flour or half all-purpose half whole wheat
  • SAUCE:
  • 2 14.5 ounce cans diced tomatoes, drained well
  • 2 tsp dried oregano
  • 3 tablespoon olive oil
  • ½ tsp salt

INSTRUCTIONS

  1. DOUGH:
  2. Mix the yeast and water in a small bowl, cover and let stand for about 5-10 minutes.
  3. Mix the oil, honey, salt and yeast mixture in a large mixing bowl. Mix in the 3 cups of flour, a cup at a time. If the dough seems too wet, start at the fourth cup, ¼ cup at a time. Turn the dough onto a floured surface and knead until moderately stiff, about six minutes.

Mexican Pizza Casserole

This easy Mexican pizza casserole is just amazing! Cheesy layered tortillas with chunky salsa and beef, it’s my family’s favorite comfort food!
You can make it as spicy as you want, or use a milder salsa and then allow those who love a lot of spice to just add it to the top once it is served, either way this has become one of our favorite meals that is really easy to throw together (which I love).
his picture is what made me think of a Mexican pizza casserole more than a pie but you could go either way really. I found the large burrito style tortillas at the store right along side the small and “regular” sized ones, I used both spicy jack and cheddar cheeses but you could use either or if you prefer. I don’t like a lot of spice but this is perfect for all of us, and packed full of flavor.

Ingredients

  • 1 lb. ground beef
  • 1 c salsa
  • 1 can cream of mushroom soup
  • 3 large tortillas (burrito style, large 10 inch)
  • 2 c cheddar cheese sharp is best
  • 1 c spicy jack cheese
  • 1/3 onion diced
  • 1 small can diced chiles optional
  • salsa verde topping
  • sour cream topping

Instructions

  1. Cook your ground beef with your diced onions, drain fat. Put in a bowl.
  2. Add your cream of mushroom soup and salsa in with your ground beef and stir well. Shred your cheeses and mix in another bowl.
  3. Spray non stick spray inside your pie plate and push 1 large tortilla inside. A bit of it will go up on the sides which is good.
