PINEAPPLE SANGRIA

If you love pineapple, this Pineapple Sangria is for you! Made with prosecco, pineapple juice, and white rum, this sangria is sweet, refreshing, and perfect for summer parties!

Let’s talk about summer parties for a minute….shall we? Because our weekends are filling up with them. Quickly! And even though that probably makes it sound like we have the most happening life EVER….the truth is they’re all for kids. Every. Single. One of them. I guess that’s what I get for having such a big family.

Between all the nieces and nephews in my family, there are 7 summer birthdays. And when you add in school friends and family friends and graduations….well….let’s just say it’s hard to find a weekend in summer where we’re not partying with kids. And believe me….we’re trying!

  • 1 bottle prosecco
  • 1 1/2 c. pineapple juice
  • 1/2 c. white rum
  • 1/4 c. simple syrup
  • 1 whole pineapple cubed
  • 1 lime thinly sliced
  • 1 lemon thinly sliced
  • maraschino cherries for garnish

SPARKLING PINEAPPLE LEMONADE

I think summer parties need a signature cocktail/drink. This summer, our signature cocktail is the Sparkling Pineapple Lemonade. It is so light and refreshing! We like to make this with vodka, but you can also make it non-alcoholic. Just swap out the vodka for water and you are good to go! Either way it is delicious!

This Sparkling Pineapple Lemonade is perfect for a party since it makes a lot of lemonade. The recipe is also easy to half or double, so you can adjust it to your needs. It is best served cold or over ice with some fresh lemon and pineapple slices.

This would be perfect for any last minute 4th of July parties or upcoming summer cookouts. I can actually see us serving this at one of our tailgates this fall.

INGREDIENTS:

  • 1 cup dry lemonade drink mix (Country Time)
  • 2 cups vodka or water
  • 1 (48-oz) can pineapple juice, chilled
  • 3 cups Sprite or 7Up

INSTRUCTIONS:

  1. In a large pitcher, combine lemonade mix and vodka/water. Stir until dissolved.

It’s Friday!  And PSA – Mother’s Day is SUNDAY!  Mother’s Day is a pretty emotionally loaded day for many people.  If you are lucky enough to have your mom in your life, be sure to celebrate her.  If you are lucky enough to BE a mom and have your children here to celebrate you, treasure that. For people who have lost their mothers, or their children – be tender with yourself this weekend.  And that is all the heavy, emotional stuff I will throw at you today. ❤❤❤  Back to these Rosé Raspberry Sorbet Mimosas.

INGREDIENTS

  • 1 bottle Rosé Champagne/sparkling wine
  • 1 pint raspberry sorbet
  • Fresh herbs for garnish, such as rosemary or mint (optional)

INSTRUCTIONS

  1. To make one drink: Place one small scoop of sorbet into a champagne flute, top with champagne.  Garnish with herbs if using.  Serve immediately.

PUMPKIN SPICE WHITE HOT CHOCOLATE

This hot chocolate recipe had me at Pumpkin….then I was sold after I read White Hot Chocolate!   I’m a sucker for the Pumpkin Spice Latte’s at Starbucks so this recipe really caught my eye.  It’s a delicious hot drink that does not include coffee, so it’s the perfect  treat for the the non coffee drinkers and children!

I think I will be sipping one of these on Halloween night, awaiting the onslaught of trick-or-treaters.  It would also be perfect at Thanksgiving or just any cold night snuggled up by the fire!

  • 1.5 cups whole milk
  • 1/2 cup canned pumpkin puree
  • 1/2 teaspoon pumpkin pie spice
  • pinch of ground cloves
  • 1/2 teaspoon vanilla
  • pinch sea salt
  • 2 ounces white chocolate (roughly chopped)

DIRECTIONS:

  1. In a small sauce pan over medium heat, combine milk, pumpkin and spices. Cook string constantly until just simmering.
