DOUBLE CHOCOLATE PALEO BANANA BREAD

About ten years back, I had a major thing for banana bread. I made a loaf every few days, and each time I tweaked the recipe to make it as “healthy” as possible. I used whole wheat flour, extra wheat germ, and swapped out the oil and butter for apple sauce. I was working as an outside sales rep back then, and I sustained myself on banana bread at least 80% of the time.

When I finally quit that job, I also quit banana bread. I ate it so much that eventually I’d lost my taste for it altogether. It wasn’t until a few months ago that I finally came around again when I found an enticing recipe for brown butter banana bread and had a pile of rotting bananas on my counter. But this recipe wasn’t fooling anybody. This wasn’t health food. This was cake.


Of course it was tasty. But if I’m going to take in those kinds of calories, I want it to actually taste like cake and not something trying to pose as a nutritious breakfast. However, the dry, wheat-filled loaves of my past weren’t exactly something I wanted to revisit, so I began experimenting with a few different techniques, and that’s how this recipe was born.

This is a new kind of healthy banana bread, or at least it is for me. It’s made up of mostly bananas – six of them to be exact – and contains no added sugar, aside from what’s in the dark chocolate (which really isn’t much). There is lots of cacao powder, which gives it a rich, deep, chocolatey flavor in addition to antioxidants, vitamins, and minerals. It has coconut and almond flour for added fiber and protein, but they also provide a wonderfully moist, dense, and slightly chewy texture. It also has eggs to add structure and lightness. But I’m not using just any eggs, I’m using Eggland’s Best eggs

I’ve always seen Eggland’s Best eggs at the market, but I never realized they’re actually MORE nutritious than regular eggs. They have less calories, fat, sodium, and cholesterol, but contain the same amount of protein, along with significantly more omega-3 fatty acids, DHA, folate, lutein, and vitamins B, D, E.

It’s not sorcery, it’s because Eggland’s Best feeds their hens a nutrient dense, all-vegetarian diet consisting of healthy grains, canola oil, and a supplement of rice bran, alfalfa, sea kelp, and Vitamin E. Ten years ago I thought that whole wheat flour, wheat germ, and apple sauce were the keys to making both healthy and tasty baked goods, but I was so wrong. Healthy? Depends who you ask. Tasty? That’s gonna be a straight up no for me, dawg. Tolerable is more like it.

Quick Keto Jalapeno Cheese Bread Recipe (Only 3 Ingredients)

Bread recipes just don’t get any easier than this Quick Keto Jalapeno Cheese Bread Recipe that has just 3 ingredients!  See, you can make a delicious bread with very little effort.  You have got to try it!  It’s way easier than the 90 second Keto Bread recipe too!  Don’t get me wrong.  I love that recipe but sometimes I want to make a few bread slices at a time instead of just one microwave mug recipe.

The jalapenos in this recipe give it just the right amount of flavor.  If you decide not to add jalapenos on top, I might add a few your favorite seasonings to it.  I love dill seasoning, so I would tend to add that with a bit of sea salt too.  Yummy!

Now, if you want a huge loaf of Keto bread, I highly suggest you try and make this Savory Keto Bread Recipe.  It’s probably the closest thing I’ve tasted to real bread when doing the Keto diet.

We’ve tried and tested so many different keto bread recipes and finding ones that are worthy of a blog post like this are far and few between.  I can’t forget to add this Keto Pull Apart Pizza Bread recipe while I’m talking about bread because this recipe is always a hit at parties!


Ingredients

  • 1 cup Shredded Low-Moisture Part-Skim Mozzarella Cheese
  • ½ cup Parmesan Cheese, grated
  • 2 large Egg, fresh, whole, raw
  • Optional:  Jalapenos

Instructions

  1. Combine the shredded cheese and egg in a bowl and mix it until the ingredients are fully combined.
  2. Divide the mixture equally into four or six equal parts (depending on the size bread you want) on a baking sheet lined with parchment paper or a silicone baking mat.
  3. Bake at 375 degrees for about 15 to 20 minutes until the cheese has fully melted and created a slight brown crust.

Chocolate Chip Banana Bread Bars {Paleo}

The time finally came – we didn’t finish 40 bananas in a week.

I think it was me slacking but it doesn’t matter because I created an awesome grain-free recipe with 2 over-ripe bananas.

Since we normally go through bananas like water, this was a special occasion and I really didn’t want to screw it up.  The pressure was on, and deliver I did on this one!



I didn’t want a regular old banana bread, although I really appreciate a good one.  I wanted something a bit different. Gooey, chocolatey and decadent enough to be a real dessert.

Something dense that wouldn’t crumble, but also soft.  Anyway, this wound up being it and thank goodness, because I was at high risk for recipe heartbreak and you all know how hard that is for me.


Ingredients

  • 2 med over-ripe bananas mashed
  • 2 large eggs
  • 1/4 cup organic coconut sugar
  • 1/4 cup coconut oil melted
  • 1/2 tsp pure vanilla extract
  • 1 1/2 cups blanched almond flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup Enjoy Life chocolate chips or homemade paleo chocolate chunks*

Instructions

  1. Preheat your oven to 350 degrees and line an 8 x 8" baking dish with parchment paper along the bottom and sides
  2. In a large bowl, whisk together the mashed bananas and 2 eggs.
  3. Add the coconut sugar, coconut oil, and vanilla and continue to mix until smooth.

Perfect Paleo Banana Bread

I originally shared this Paleo Banana Bread recipe in 2013. It’s received hundreds of glowing reviews and remains one of the top three recipes on my blog…for good reason! It’s easy to prep with no mixer required, has short ingredients list, is gluten-free and Paleo-friendly and tastes delicious. I’ve made this recipe over and over again and I’m always amazed by how similar it tastes to regular banana bread.

Banana bread lends itself so well converting to Paleo Banana Bread for a few reasons.

The bananas are already so naturally sweet that you don’t need to add much more to it.
Banana bread is so versatile in general. I’ve gotten pretty crazy with modifications to regular banana bread in the past and it’s very forgiving.
The bananas add so much moistness to the bread and they’re a perfect complement to the more dense almond and coconut flours.
I used this recipe from Comfy Belly as my base to create my Paleo Banana Bread recipe and modified based on multiple rounds of testing and intuition. My main changes included reducing the number of eggs to improve texture, adding some additional spices, switching coconut oil for the olive oil and a few other small things.


You'll Need...

  • 3/4 teaspoon of baking soda
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon of kosher salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 3/4 cup of almond flour
  • 1/4 cup of coconut flour
  • 2 tablespoons melted coconut oil
  • 2 large eggs
  • 2 very ripe medium to large bananas, mashed
  • 1/4 cup of maple syrup
  • 1 teaspoon pure vanilla extract

Directions

  1. Preheat oven to 350 degrees and prepare a 9 x 5 loaf pan by either oiling the dish or lining with parchment paper. (I'm a big fan of the parchment paper for easy removal from pan and easy clean up.)
  2. In a medium bowl, whisk together baking soda, baking powder, salt, cinnamon, nutmeg and flours. In a separate small bowl, mix together coconut oil, eggs, bananas, maple syrup and vanilla until very well combined.
